Octane is only part of the equation, the quality and consistancy of gas today is terrible. Your bike might be jetted correctly but for what formula of gas, 10% ethanol, winter blend, different blends for high population areas, different elevations with different evaporation rates, etc. Race gas is a consistant high quality gas that allows you to jet on the edge. Plus each gas company puts in their own additive package which is a different issue.
Really it shouldn't be looked at as race gas but as high quality gas. The bottom line is these motors only run better on race gas if the quality of gas your comparing it to is lacking.
