Carb jetting on built GPX 124???? Recommendations?

Just wondering, I just bought a GPX 124 from AHP, came with the race cam, high compression piston, and port/polished head. Bike is also running a Leo Vince exhaust and a rev box. I've got a Kitaco super coil and AHP IRK coming in the mail. I am not real experienced on how to go about tuning a carb, there seems to be a flat spot at idle if you whack the throttle but other then that when you get the RPM's a bit over idle it revs up nicely. I've got a 22mm mikuni on it now, not sure what jets are in it but I can check that. I live in central Florida so I am pretty much at sea level.

Also, I hear people talking about the screw? Is that the screw on the riders right side of the carb? When people talk about adjusting it, do you close it all the way and back it out a certain number of turns or turn it all the way out and screw it in a certain number of turns. I've currently got mine adjusted so the bike will idle on its own. Not sure where its set at.

Last thing, when I used the intake that was supplied with my motor the carb is hitting the bottom of the frame, I installed my stock intake because it curves (stock thumpstar) instead of going straight up but its smaller and I'ld like to use the one AHP intended on that motor running.

My god cant believe no one has any input. Should I just scrap the carb? what do you all recommend. I just picked up a 26mm intake with the proper curve that I need to have.
